Ethnic groups and people who are looking for more diversity when cooking will be especially interested in many of these varieties.</p>

<p><span style="font-size: 10pt;color: black;font-family: Verdana">When going into Asian and gourmet eggplant production, it is best to start small with a couple of varieties or have several varieties but not a lot of plants of each. Test your market. See what is the best way to market your produce. Sell larger eggplants by the pound while the smaller ones (ones of different color) might sell better mixed in quart baskets. Taste them for your self using various recipes. Provide recipes for your customers. Learn when the fruit are at the right stage for picking &#8211; before they get seedy. This can be different as the season progresses. Smaller fruit or “baby” fruit might sell better than 2-3lb fruit. Keep water available and constant across the season, though during heavy fruit load in the heat, extra water will be necessary. Protecting against insects is especially important from transplanting to flowering. Get good leaf canopy going and watch for Colorado potato beetle, flea beetle, and spider mites.<br />
